Needing some healthy lunch-time inspiration that DOESN’T involve bread? Try these quick and healthy lettuce cups (or as I call them – Choy Bow) – and you can get creative with your fillings too! Think Tuna, Salmon, Beef Mince….

Ingredients – 

  • 1 x Red Apple
  • 1-2 Celery Stalks
  • 250 g Shredded Chicken
  • 4 Iceberg Lettuce Leaves
  • Low Fat/No Fat Mayonnaise

Directions – 

  1. Finely chop the apple and celery
  2. Place shredded chicken in a bowl and add chopped celery and apple
  3. Mix through a small amount of low/no fat mayonnaise (just enough to bind the ingredients together)
  4. Spoon mixture in lettuce cups and serve
